Modeling of milk acidification

This paper deals with the development of an empirical model to describe dynamics milk acidification process for production acid casein. The is based on pH profiles during since a good indicator status precipitation. Data from laboratory experiments has been used identify parameters in proposed model. Calibration and validation results, independent data set, show that able predict accurately at different temperatures addition rates. Furthermore, simulation study as advisory tool suggest addition, proving parsimony
